Although I have never travelled out of New Zealand,I have used the following currencies;
New Zealand Dollar (native).
Pounds Sterling.
U.S. Dollar.
Euros (1 purchase from the Republic of Ireland).
Canadian Dollar (1 purchase from Canada).
Interestingly,I have never used Australian Dollar banknotes,but we used to get Australian & Fijian coins in change prior to 2006.

An update... I now also have used the Pound Sterling.
7 currencies for me in total
And you could say I've been paid in South Korean won also, but that was by someone who had been there, whom I did a small favor, and he 'paid' in won. But I don't count it.

Which Dollar currency did you use? Quite a few countries have Dollar currencies,including Australia,Bermuda,Canada,the Cayman Islands,New Zealand,& Trinidad & Tobago.
As for the Rouble,I can guess that is the Russian Rouble.

Only visited Nukunonu. Atafu was also in the planning originally, but the schedule was too tight.
The visit to Tokelau was the only reason I brought NZ$ with me. I used them to pay for the immigration fee and dinner at the local hotel (where I even discovered a
10 euro note). The Tokelau Tala is probably too much in demand by collectors to use it for payments. Maybe they're only made for collectors.
Pacific Expeditions is the company that got me there (although they used a different boat back then)

The Tokelau Islands use New Zealand Dollars only.The Tokelau Islands Tala is only a medal-coin currency unit like the Niuean Dollar & the Pitcairn Islands Dollar are.
