I found today NC**00** in 55122 Mainz, Volksbank Im Münchfeld (opposite of Rewe).
I have checked many Volksbank ATMs in Mainz today but it was the only one that offered NC 5's

I am sorry, just a question:
Which number in the French numbering system shows how far down we are in this sequence? I mean, here in Greece we have YA00 all the way to YA99 and then YB00 etc, or some sort. So technically we know when YB's will turn up.
But here? Is it the '79' we are looking at? When this "79" becomes "99", does it mean that we will then see UG/UH/UJ/UK/UL/UM?
And is this the same as with Italy?

Yes. (You don't have to be sorry, we all have questions :))
France as well as Italy code the plate position into the second letter and the first digit. So an UA0... can be any plate, but always has the shortcode U0xxA1 and so on (it varies with the denominations). An example with :flag-fr: :note-5: (as I have entered lots of them):
U002A1/UA001
U005A1/UA012
U008A1/UA018
It works the same way with Italian notes, but there S0xxA1 = SF1
Greece just does it the same way as for example Spain or German Bundesdruckerei (RA, RB, RC, RD) does.
I guess the :note-20: :flag-fr: U/U will be the first to run out of UA-UF, as they have already Uxx79 and France will be producing :note-20: in 2020 and 2021. Italy so far has only :note-50: S033/Sxx54 (okay, they produce :note-50: both years as well)
