Putting stickers on coins is mainly done in the Netherlands. I know a person who collects 'euro coins with stickers on them' and helped him to collect since many euro coins went through my hands before I went to South America. Many stickers are peeled off (often leaving a sticky coin), and those that remain seem to travel in quit a low speed. I only saw some German stickers (of a club close to the Dutch border) and 1 Spanish sticker (of a place where probably many Dutch youngsters go in their holiday). It definitely does not seem a feasible idea to me.

How do they look like? How big are the stickers? Covering the whole coin, or only parts?

They are called pallets. In my workplace we get shipments weekly at least from the UK, Denmark and Germany, but I haven't seen any country stamps in them. Even though they are all standard EUR sized pallets.

BTW at least in Finland there's country specific pallet size (FIN pallet, 1,0 m x 1,2 m opposed to EUR pallet 0,8 m x 1,2 m). :p

They aren't actually country stamps, but railway company stamps. They've got either the names or the logos of the national railway companies. Therefore:
= Germany
VR = Finland
SNCF = France
= Spain
MÁV = Hungary
= Portugal
= Belgium
= Italy
= Poland
= Czech republic

In my pic above you can see at least three DB-stamps (=Germany). The fourth one is either DB or VR, I can't really see it well enough :/
Most of the pallets seem to come from Germany, although I've also seen a lot of Polish ones :)
